Korkoto is peeled and broken durum wheat. In practice, it is like bulgur, except that the bulgur is parboiled. Korkoto is used as raw material mainly in the Pontian cuisine.
Pontians use it in a very popular soup called "Sorvas". Sorvas is a soup made with yogurt, spearmint, korkoto, butter, and water.
