In a food processor, add the lentils and mash them well.
Transfer them to a bowl and add the flour, carrot, onion, mustard, and mint. Season with salt and pepper and mix with your hands, wearing disposable gloves.
Shape the mixture into about 40 balls.
Place them on an oven tray with baking paper and bake for 15-20 minutes, until they get a dark golden color.
Serve the lentil meatballs with whatever you like.
