Ingredients:
- 250 g fava beans
- 750 ml of water
- 1 chopped onion
- 40 ml olive oil
- ¼ kg of salt
- 1 pinch of pepper
- Onion for garnish
- Olives for garnish
- Olive oil for garnish
How to:
- Put the fava beans in a strainer and rinse them well with plenty of water.
- Put it in the pot with the water, on high heat until it starts to boil.
- Then reduce the intensity to low heat and skim 2-3 times (remove the foam that forms on the surface).
- Add the onion and let it simmer until it softens and absorbs the water, about 40 minutes (if needed in between, top up with a little hot water).
- Mix gently in between, but not constantly.
- When the fava is done, add the olive oil, salt, and pepper, mix, and let it boil for another 2 minutes.
- Mash it with a blender.
- Store it in a bowl with cling film touching its surface.
- Serve garnished with some onion, olives, and olive oil.
