Stuffed Vegetables (Gemista)

A classic Greek, summer food! Easy and delicious!

Ingredients

500gr Pork Minced Meat 

300g rice Carolina 

Salt 

Pepper

2 onions

Parsley

Dill

Mint

10-12 tbsp Olive oil 

10 bell peppers

5 tomatoes

1 cup of water


How to make gemista

We start the Gemista by thoroughly washing all of our vegetables and slicing the lids off.

We cut 1 slice off each tomato (we only want to remove the lid). Then with a spoon we remove the interior while being careful to retain about 1/8″ of  flesh around the skin. For the bell peppers we cut one slice (about 1/8″) off the top. Then remove all of the seeds and white flesh. First we blend the tomato flesh until smooth, blend the onion as well. In a bowl add the tomato flesh, onion, chopped dill, parsley and mint. Wash the rice thoroughly and add it in the bowl. Add the Minced Meat, 2 tablespoons of olive oil, salt and pepper. Mix your ingredients, until the mixture is fine and together. In an oven pan layout your veggies and start stuffing them, to the top. Close with the lids of the veggies. Add olive oil, about 5-6 tablespoons and a cup of water. Cover the pan with aluminum foil and bake for about 30-40 minutes. Remove the foil, and keep baking for another 40 minutes, until your veggies are golden.

Enjoy with some Greek yogurt!
